Blackberry Leather: A Taste of Summer in the Freezer

The blackberries are ripening fast now and the hedgerows are dripping with dark, juicy fruit. It is the perfect time to get out with a basket and gather what you can before the season turns. Blackberries are wonderfully versatile: they can be eaten fresh, made into syrups, tinctures, jams, cordials and one of my favourite preserves, blackberry leather. I roll it up and keep it in the freezer, then pull a strip out in the middle of winter for a little taste of summer sunshine.

Why Gather Blackberries Now

Blackberries (Rubus fruticosus) are one of the most abundant wild fruits in Britain and they are packed with goodness. They are rich in vitamin C, fibre and deep purple anthocyanins, the antioxidants that give them their beautiful colour. Traditionally, blackberries have been valued for supporting immune health, soothing digestion and nourishing the blood. They are cooling and cleansing in nature, making them a lovely autumn food to help the body transition after the heat of summer. Best of all, they are free, plentiful and right on our doorsteps.

Here is a quick look at how I make blackberry leather at home. I simply blend the berries, spread the puree thinly and dry it until it is chewy and rich. It is one of the easiest ways to preserve a glut of blackberries without adding a lot of sugar.

A Little Taste of Summer in Winter

Once the leather is dry, I cut it into strips and roll it up. I store it in the freezer so it keeps perfectly and I can enjoy a taste of summer during the cold winter months. It is a wonderful snack on its own, chopped into porridge, or tucked into a lunchbox. Children love it too, and it is a lovely way to share the harvest with the family.
